In a typical class, we will create and partake in an authentic Mexican meal, based on the Bajio’s Bounty collection.  Participants’ registration fee covers materials and copies of the recipes covered in class (copies of book can be purchased separately).  Class hosts receive free attendance to the class and a free copy of the cookbook. About the Author
Nicole Salgado, born to parents of Mexican and European ancestry, grew up in Central New York.  Growing up, during travels, and while living in the Bay Area, she was exposed to authentic Mexican cooking via friends and family members.  Since 2006, she has lived in her husband’s home state of Querétaro, Central Mexico where she’s become part of an extended Queretaran family.  There she was introduced to traditional methods for cultivating and utilizing maize, as well as many other popular Mexican foods.  In an effort to combine their passion for good food with environmental health, she and her husband cultivate an organic home garden and small animal production among other sustainable practices.  This book is a collection of authentic recipes from the Querétaro and the surrounding region and is dedicated to the Mexican women carrying out their ancient traditions worldwide.
